Roasted New Potatoes with Lemon, Basil, and Chives

Preheat oven to 425° - Serves 4 to 6

Ingredients

2 1/2 lb new red or white potatoes, unpeeled

1/4 cup olive oil

2 Tbsp fresh lemon juice

1 tsp salt

1/4 tsp paprika

1/2 tsp freshly ground pepper

1 Tbsp finely chopped fresh basil

1 Tbsp finely chopped fresh chives

Instructions

  1. Wash the potatoes under cold running water and pat dry with a kitchen towel.

  2. In a roasting pan stir together the olive oil, lemon juice, salt, paprika and pepper. Add the potatoes and, using a large spoon or by shaking the pan from side to side, coat the potatoes evenly with the oil mixture.

  3. Roast the potatoes, turning every 15 minutes, until tender and golden brown, about 45 minutes. Taste and adjust the seasoning.

  4. Transfer to a serving dish and garnish with the basil and chives. Serve immediately.
