Grilled Halibut with Avocado Mango Salsa

Ingredients

1 ripe avocado, diced

1 cup mango, diced

1 cup cherry tomatoes, quartered

4-6 large basil leaves, thinly sliced

3 Tbsp olive oil, divided

3 Tbsp fresh lime juice, divided

2-3 dashes hot sauce

Kosher salt and freshly ground pepper

4 6 oz halibut fillets

4 lime wedges

Instructions

  1. Gently combine avocado, mango, tomatoes, basil, 1 tablespoon each olive oil, lime juice, and hot sauce in medium bowl.  Season with salt and pepper.  Set aside at room temperature.

  2. Place halibut in glass baking dish.  Drizzle over remaining 2 tablespoons each of olive oil and lime juice.  Season with salt and pepper.  Let marinate at room temp for 10 minutes, turning once or twice.

  3. Brush grill rack with oil.  Grill over medium high heat until just opaque in center, about 5” per side.

  4. Serve with salsa over fish and squeeze lime wedge over each.
