Apricot Fingers

by Cindi Sutter, Founder & Editor - This recipe comes straight from my paternal grandmother’s recipe box…thanks to my Nano- Bess Mayes Kenne - It’s hard to explain exactly what Apricot Fingers look like, but I promise they’re super yummy and this recipe only has 3 ingredients and it’s easy.

We’re calling this dessert, but for you Mom’s who love sweets, this is extra delish with coffee….

This recipe should be made the day before.

Ingredients

1 package dried apricots

1 cup nuts (of your choice)

Powdered Sugar

Instructions

  1. Steam the apricots until they are soft, then let them cool.

  2. While you’re waiting, chop 1 cup of nuts and mix just enough powdered sugar to form a dough-like mass.

  3. Knead well using powdered sugar on a cutting board. Form into fingers and roll in powdered sugar, as much as you prefer. Shape into a half-moon and let dry and cure overnight.
