Strawberries- Almost Too Good to Be True

When I think of the strawberry, I imagine it as the prom king or queen. On paper strawberries literally have everything going for them.  They are visually beautiful, sweet, indulgent, and mix in with both desserts and savory dishes.  What makes them almost too good to be true, however, is they are also amazingly good for us.  

Strawberries give us the good summer feels, but they also pack an impressive health punch.  This luscious berry contains only ~49 calories/cup while bringing an excellent source of vitamin C and manganese and decent amounts of folate and potassium to the table.

Strawberries are also rich in antioxidants and plant compounds, which may have benefits for decreasing inflammation and the risk of chronic conditions. Also, this superstar fruit has a pretty high water and fiber content, which makes it have a relatively low glycemic index. This helps control the rise of blood sugar levels, which also makes it a good choice for those individuals managing diabetes or weight.

Ok, so maybe strawberries aren’t just awesome on paper, maybe they are the real deal.  Enjoy the fruit of the season, there is no reason not to dive in.  Here are a few of my favorite and unique recipes to celebrate the sensational strawberry:
