Lava Cakes

Ingredients

5 ounces bittersweet or semisweet chocolate, chopped

10 Tbsp unsalted butter

3 large eggs

3 large egg yolks

1 ½ cups powdered sugar

½ cup all-purpose flour

Instructions

  1. Preheat oven to 450 degrees F.  Butter six ¾ cup ramekin dishes.

  2. Stir chocolate and butter in medium saucepan over low heat until melted.  Cool slightly.

  3. Whisk eggs and egg yolks in a large bowl.

  4. Whisk in sugar.  Then, stir in chocolate mixture and flour.

  5. Pour batter into ramekin dishes, dividing equally.

  6. Bake cakes for 11-14 minutes.  Sides of cakes should be set but the center remains soft and runny.  

  7. Run knife around cakes to loosen and immediately turn cakes upside down onto plates.  

  8. Serve with ice cream, hot fudge sauce, or whipped cream.
