Chinese Peanut Noodles With Turkey

by Katie Chin, Tastemaker in Residence

I love Turkey ala King and Turkey Soup as much as anyone else, but why not shake things up with your leftover Thanksgiving turkey this year with this Chinese Peanut Noodles with Turkey recipe? It’s super easy, super fast and super flavorful and my whole family “gobbles” this up. Feel free to use any veggies you may have on hand and add extra chile-garlic sauce or Srircha sauce for an added kick in the pants.

Ingredients

2 cups fresh sliced veggies, such as broccoli florets, red bell pepper and carrots

1/2 cup crunchy peanut butter

3/4 cup chicken broth

1 tsp toasted sesame oil

2 Tbsp soy sauce

2 garlic cloves, minced

1 Tbsp chile-garlic sauce

2 tsp minced fresh ginger

8 oz whole-wheat spaghetti

2 cups shredded cooked turkey meat

Instructions

  1. Put a large pot of water on to boil for cooking pasta.

  2. Steam mixed veggies until tender-crisp and set aside.

  3. Whisk peanut butter, chicken broth, soy sauce, garlic, chile-garlic sauce and ginger in a large bowl.

  4. Cook pasta in the boiling water until al dente. Rinse with cool water and drain. Add the reserved peanut sauce, veggies and shredded chicken. Toss to combine. Serve warm or chilled.
