Cajun Shrimp Dip

Ingredients

1 Tbsp butter

1/2 cup onion, chopped

1 red bell pepper, chopped

3 cloves garlic, finely chopped

1 lb shrimp, chopped into 1/2” pieced

1 tsp Cajun seasoning

2 Tbsp lemon juice, freshly squeezed

2 tsp Worcestershire sauce

6 oz cream cheese, room temperature

1/4 cup sour cream

3/4 cup shredded mozzarella cheese, divided

1/4 cup Parmesan, shredded

1/2 cup green onions, thinly sliced and divided, reserving 2 Tablespoons for garnish

1/2 tsp hot sauce

Kosher salt

freshly ground black pepper
Instructions

  1. Preheat oven to 350.  In medium skillet over medium heat, melt butter and add onion and red pepper, cooking until soft, about 5 minutes.

  2. Push onion mixture to the side of the pan, add shrimp and garlic, stirring and cook until shrimp is pink and garlic is fragrant, about 2 minutes.  Stir in Cajun seasoning, lemon juice, and Worcestershire sauce, mixing well and bring to a simmer.

  3. Remove pan from heat and stir in cream cheese, 1/2 cup mozzarella cheese, Parmesan, green onions, and hot sauce.  Season to taste with salt and pepper.

  4. Pour mixture into baking dish, sprinkle with remaining 1/4 cup mozzarella cheese, and bake about 20 minutes until bubbly and golden brown.  Optional:  for a more golden top, broil on high for 2 minutes.

  5. Garnish with remaining green onions and serve warm with chips or crackers
