Corn Fritters

Why must something so delicious be so full of calories and fat? It just ain’t fair!

Makes 4 to 6 servings

Ingredients

Vegetable oil for frying

1 1/3 cups all-purpose flour

2 tsp baking powder

1/4 tsp salt

2/3 cup milk

1 egg

1 (16 oz) can whole kernel corn, drained

Powdered sugar

Instructions

Heat oil to 375°. Mix dry ingredients together. In separate bowl, stir milk, egg and corn together until well blended; stir into dry mixture. Drop batter by Tablespoonfuls into sizzling hot oil. Fry until well browned, about 4 or 5 minutes. Drain on paper towels. Sprinkle with powdered sugar and serve immediately.
