Ramp Pesto Pizza

INGREDIENTS

FOR THE PESTO

  • 2 cloves garlic

  • 1 bunch ramps

  • 1/2 bunch cilantro (stems and leaves)

  • 2/3 cup toasted almonds

  • Olive oil

  • Salt

FOR THE PIZZA

INSTRUCTIONS

  1. Combine pesto ingredients in a food processor, blender or mortar and pestle. Mix until desired consistency. Add more olive oil as needed and season with salt to taste.

  2. Spread pesto on your pizza crust. Top with roasted golden beets, chickpeas, spinach, and cheeses. Bake for 10 minutes at 375.
