Fried Matzo Brie

Makes 2 to 3 servings

Ingredients

2 Tbsp butter

6 Matzos, broken into small pieces

Hot water

6 eggs, well beaten

1/8 tsp pepper

Salt to taste

Instructions

Place matzos in colander; rinse with hot water to moisten slightly. Drain and squeeze dry. Combine matzos with eggs, pepper, and salt. Fry over moderate heat until set.

The Weals like it fried and with onions, the Zelicksons prefer theirs in big pieces and crispy, the Johnsons want it slushy like scrambled eggs and the Papers and Harrises love it any which way. Everybody likes it served with sour cream and strawberry jam or cinnamon/sugar or maple syrup.
