Teri's Travels-Bequia part 2

We happened upon this auction item/stay when Kerry D'Amato, a homeowner in Bequia, donated a 10 day stay at her beautiful home, Seacliff, at a Wildlife Rehabilitation Center of Minnesota event (for more details on the WRC and to help wildlife that is in trouble, please visit WRC.

Seacliff, also available as a rental, sits atop Spring Estates overlooking Spring Bay (see trip advisor for rental information). We spent many an hour in the lovely pool while gazing at the gorgeous vistas and sipping cocktails.

In fact, we "invented" a drink in honor of the house, which we dubbed the "Bequia Seacliff."  To make this concoction, we used implements available at the house.

Recipe for the "Bequia Seacliff" (makes 6 cocktails)

Ingredients
6 ounces vodka
1 12 oz. can of club soda
1 cucumber

Instructions

  1. First, cut the cucumber in half. Leave the skin on the cucumber. Place the cucumber in a tall glass with a wide bottom and use a muddler or smoothie machine to muddle the cucumber finely (we used the latter as that was available at the house and would be easier and faster to use).  
  2. Pour 3 ounces of vodka into a martini shaker and add ice. Add 1/2 muddled cucumber mixture to the shaker. Shake vigorously.
  3. Pour into martini or high ball glasses. Add club soda to fill. Slice remaining cucumber and add slices to each drink. Repeat process for the remaining 3 drinks.
