Recipe for the "Bequia Seacliff" (makes 6 cocktails)
6 ounces vodka
1 12 oz. can of club soda
- First, cut the cucumber in half. Leave the skin on the cucumber. Place the cucumber in a tall glass with a wide bottom and use a muddler or smoothie machine to muddle the cucumber finely (we used the latter as that was available at the house and would be easier and faster to use).
- Pour 3 ounces of vodka into a martini shaker and add ice. Add 1/2 muddled cucumber mixture to the shaker. Shake vigorously.
- Pour into martini or high ball glasses. Add club soda to fill. Slice remaining cucumber and add slices to each drink. Repeat process for the remaining 3 drinks.
