One-Dish Spring Salmon

Not everyone is a fan of ham, so a great additional entrée during spring gatherings is a one dish wonder with the nutrition superstar…salmon!  ou honestly can sub out any veggies with ones you prefer more, but here are my favorites

Ingredients
2-6 salmon filets (depends on the size of your crowd)
2 Tbsp of infused olive oil (I like Milanese Gremolata) but any flavor you like if great
Few splashes of Oregano White Balsamic Vinegar or fresh lemon juice
1-2 tsp Herb de Province seasoning mix
½ can S&W cannellini beans
Veggies of choice
I put in the baking dish: olives, sweet potatoes, broccolini, cherry tomatoes, chives, brussel sprouts

Instructions

  1. Place salmon filets in baking dish. Sprinkle olive oil, vinegar, and herbs over the top.
  2. Place veggies mixtures in open space around salmon filets in baking dish
  3. Bake covered at 375 degrees for 10 minutes. Then remove cover and bake until brown, yet tender (about another 5-8 minutes)
