Shrimp, Sausage, and Potato Sheet Pan Dinner

Ingredients

1-pound shrimp thawed (Costco frozen are my preferred).

3 sausages (I like applewood smoked brats; Andouille sausage is too spicy for most in my family)

1-2 pounds small golden potatoes

1 stick butter plus 1 tablespoon

Seasoning of choice; options include salt/pepper, garlic salt, all-purpose seasoning  

Instructions

  1. Preheat oven to 450 degrees.

  2. Halve potatoes and boil in water for 10-15 minute; until tender but not mushy. Drain water and set aside.

  3. Cut sausage into chunks and saute in pan with about a tablespoon of butter until just golden brown (will cook more in oven) and set aside.

  4. Toss shrimp, sautéed sausage, and potatoes on sheet pan. Drizzle with one stick melted butter. Season as desired.

  5. Place in oven and cook until shrimp are bright pink and heated through.

  6. Serve with rice, salad, corn on the cob, or other desired side.
