Sun-Dried Tomato Cheese Ball

Ironically this photo is exactly what I’m serving two friends tonight. My recipe below is probably 20 years old. It’s not the same as the one from the image below, but it looks just like it! I’m even serving Siri Daly’s Cacio e Pepe Potato Chips, from her cookbook Siriously Delicious, with my version of the cheese ball.

Ingredients

8 oz. cream cheese

4 oz. goat cheese

2 oz. bleu cheese

Sun-dried tomatoes

Pine nuts

Fresh basil

Instructions

  1. Mix cheeses together-using two knives to mix makes it easier.

  2. Roll into a ball, log, or whatever shape you prefer.

  3. Top with sun-dried tomatoes, roasted pine nuts, and fresh basil.
