Spring Fling Salad

If you’re in the mood for a light, fresh bowl of springtime heaven, try flinging together a salad that shouts spring is here at last!

Serves 1-2

Ingredients
handful of baby greens
ribbons of young carrots
diced radish
sliced green onion
snow pea pods cut on the bias
sprinkle of pea shoots or micro greens
candied almonds
skinny julienned fresh pineapple

clove garlic
goat cheese 
bread crumbs
olive oil

Instructions

  1. Fling first group of ingredients into a wooden salad bowl rubbed with a cut garlic clove
  2. Cut 4 rounds from goat cheese coat in crumbs and saute' in 1 Tbsp olive oil until brown; place 1-2 on each salad serving
  3. Combine and dress salad

Dressing Ingredients
4 Tbsp olive oil
1 Tbsp balsamic vinegar
1/2 tsp dijon
1 tsp honey
1 clove minced garlic
salt & pepper to taste
