Yellow Watermelon Popsicles

These popsicles are the perfect summer treat – they’re healthy, refreshing and so simple to make! Yellow watermelons are usually sweeter than red and are full of vitamins and antioxidants like beta-carotene to help protect against diseases. Plus, the use of yellow watermelon in these popsicles creates a fun and vibrant yellow color that makes them even more appealing! Your kids can help remove seeds from the watermelon, put the ingredients in the blender, and pour the mixture into the molds. Encourage your kids to get creative and experiment with adding some fun additional ingredients to these popsicles like other fruit, coconut flakes, chia seeds, or even candy like sour patch kids!

Ingredients

1 yellow watermelon from Loon Organics Farm

3 Tbsp maple syrup from Horner’s Corner

Juice from 1 lime

Additional Supplies: Blender, popsicle mold, popsicle sticks

Instructions

  1. Chop watermelon into chunks, removing the peel and seeds. Place the watermelon chunks in a blender or food processor. Add in 3 tablespoons of maple syrup and juice from one lime. Blend until smooth.

  2. Pour mixture into popsicle molds and insert popsicle sticks. Place in freezer until fully frozen, about 4 hours.
