Blueberry Pickin, Smoothie-in, and Drinkin

by Sue Zelickson, Tastemaker in Residence

Summer means it's blueberry pickin time in some parts of the United States. For years there have been recipes for blueberry muffins, cakes, cobblers, pies, jams, jellies and other good eatin blue morsels of summer.

In the past few years, the smoothie craze hit the market so making a healthy blueberry drink every morning could be better for you than a multivitamin. Here is an easy recipe that you can make in less than ten minutes and the only ingredient you have to chop is the banana.

You will need a top loading blender

Ingredients
1 frozen banana, thawed for 10-15 minutes
1/2 cup vanilla soy milk
1 cup vanilla fat-free yogurt
1 1/2 tsp  flaxseed meal
1 1/2 tsp honey
2/3 cup of frozen blueberries-(freshly picked then frozen are the best)

Instructions

  1. Add soy milk, yogurt, flax seed meal and honey.
  2. Cut partially thawed banana into small pieces and place in blender. Blend on lowest speed about 5 seconds or until smooth, gradually add the frozen blueberries while continuing to blend on low. Once the blueberries have been incorporated, increase the speed to blend to the desired consistency.
  3. Pour into glass, or container and enjoy a deliciously healthy start for your day. Or pour it into a few small glasses and serve it instead of juice at your Spirited Table for breakfast or brunch.
