Pina Colada Recipe

by Becca Matheson, Tastemaker in Residence

My favorite summertime beverage (when I’m not counting my calories) is a frosty pina colada. Here’s my favorite recipe:

Ingredients
One can of Coco Lopez coconut cream (It HAS to be Coco Lopez! No other coconut cream or pina colada mix will do!)
1 1/2 - 2 cups Pineapple juice
Ice
Vanilla Ice cream (optional, it works great with just ice)
Rum (or hold the rum for a delicious virgin pina colada)

Instructions

  1. In blender add a fourth a can of stirred Coco Lopez , 2 juice cans or 1 cup of pineapple juice (for the Coco Lopez and pineapple juice, blend and add more of whichever to taste), 2 scoops of ice cream (optional), and fill the blender to the top with ice.
  2. Hit the liquefy or grind button on your blender and blend until thick and smooth, adding more ice, pineapple juice, or Coco Lopez until you get the desired flavor/texture.
  3. Garnish with a maraschino cherry and a slice of pineapple and enjoy!
