Best Ever Lake Trout Recipe

2 to 3 lb. lake trout, cut in half the long way along the back bone
3 slices bacon
1 thinly sliced onion
1 to 2 bay leaves crumbled 
3Tbsp. butter
2Tbsp. flour
3 slices bacon


  1. Line a shallow pan with aluminum foil. Lay bacon and onion out evenly. Distribute crumbled bay leaves. Place trout, skin side up on the bed of bacon, onion and bay leaves. Sprinkle with salt and pepper. 
  2. Blend the butter and flour and spread on the fish. Place the additional bacon on top of the fish. 
  3. Bake at 375° for 35-45 minutes or until the fish flakes easily.
  4. To serve, remove bacon and skin. Carefully remove serving size pieces of fish from the bones.
