Creamy Leek - Sweet Pea Mash

1 Tbsp olive oil

3/4 cup leeks, thinly sliced

1-1/2 cup sweet peas, thawed

1/2 cup chicken broth

1/4 cup white wine

1/4 cup cream or half and half

salt and pepper to taste


  1. Heat olive oil in sauce pan, add leeks and saute about 3 minutes over high heat

  2. Add peas, broth, and wine and bring to a boil

  3. Reduce heat and stir occasionally for 5 minutes

  4. Transfer to a blender and puree with cream

  5. Season to taste and serve warm
