Summer Peach Salsa & Peach Royale

1 cup diced fresh peaches
1/2 cup diced cucumber
1 jalapeño pepper, seeded and diced
1 clove garlic, minced
2 Tbsp cilantro, chopped (more if desired)
2 Tbsp fresh lime juice
1/2 tsp kosher salt (or to taste)


  1. Stir all ingredients together in small bowl.

Cook's Note - Excellent with grilled salmon or a firm fish.

How about a Peach Royale? The perfect peach pairing from Santa Margherita Prosecco Superiore DOCG?


1 oz. tequila
1 oz. white peach puree
½ oz. lemon juice
½ oz. simple syrup
3 dashes peach bitters


  1. Shake and strain on ice and top with Santa Margherita Prosecco Superiore DOCG. Garnish with a peach wedge.
