Grilled Shrimp with Lemon Pesto Dip

Marinate 1 pound jumbo shrimp (16-20 count) peeled and deveined
2 Tbsp Swiss chard pesto
2 Tbsp olive oil
1 lemon, cut into wedges
1/2 tsp red pepper flakes


  1. Place shrimp and rest of ingredients in zip lock bag and marinate for 30 minutes.
  2. Grill shrimp about 3 minutes per side.  Serve with Lemon Pesto Dip.

Lemon Pesto Dip


1/2 cup sour cream    
1/4 cup mayonnaise
1/4 cup Swiss chard pesto
1/4 cup parmesan cheese
2 Tbsp capers, coarsely chopped
2 tsp lemon zest
2 tsp lemon juice
Salt and Pepper to taste


  1. Mix all ingredients and serve with grilled shrimp. 

Cook's Note - This also partners well with oversized pretzels or chips
