Picnic-Pratical Summer Grub

One of my favorite things to do in the summer is to pack up some grub and head out to a lake or a park for a picnic with family and friends. Growing up, my family would always pack delicious, healthy food (and a lawn game or two) that was picnic-practical and easy to eat on the go. Bringing along easy-to-eat snacks made the picnics more fun and we were able to spend more time enjoying the outdoors and less time putting together a complex meal only to clean it up soon afterwards. Whether we were bringing our picnic nearby to the Rose Garden or Lake Harriet, or driving to William O’Brien State Park, we always made sure to have plenty of tasty food to enjoy. Here are some of my go-to recipes:

See Watermelon, Blueberry, and Mint Salad in a Cup (SO Easy)

See Greek Salad on a Stick

Another super easy, quick recipe is to make any kind of sandwich, take off the crust, cut it into fourths, and place each piece on a skewer. I like to do this because then I don’t have to touch my food if I have been running around outside!

Hopefully these recipes will inspire you to pack up, head out, and enjoy the rest of summer!
