Baked Banana Peanut Butter Oatmeal

Celebrate National Nutrition Month this March with a Baked Banana Peanut Butter Oatmeal


Serves 6
2 cups rolled oats
1 Tbsp cinnamon
1 cup almond milk (I used Almond Breeze Vanilla) 
1 egg
3 bananas
4 Tbsp peanut butter (you can substitute PB2 for a lower calorie dish)
1 tsp baking powder


  1. Preheat oven to 375 degrees
  2. Grease 8 x 8 baking dish 
  3. Mix dry ingredients together in a bowl and set aside
  4. Mash 2 of the 3 bananas in a bowl and combine with egg, almond milk, and peanut butter
  5. Fold dry ingredients into banana, egg, almond milk and peanut butter mix
  6. Stir together all ingredients and pour into greased baking dish
  7. Slice the remaining banana and place on top of the mix in the baking dish
  8. Drizzle peanut butter on top, bake for 25 minutes, and enjoy!
