1-2-3 Chocolate Almond Butter Cookies

1 cup chocolate almond butter
1 cup pitted dates
1 large/extra-large egg
- In a food processor (or blender) add dates and blend until a sticky, well blended dough forms.
- Add chocolate almond butter and eggs and blend again. Scrape down the sides and blend again as needed making sure everything is well combined.
- Line a cookie sheet with parchment paper and non-stick spray. Using a small scooper form cookie balls on the tray. There should be around 10-11 cookies (double recipe if want more). Spray a fork with non-stick spray (this will help the fork from sticking when patting down the cookies). The cookies will not spread more than you flatten them so go both directions with the fork and flatten them.
- Bake at 350 for 10-12 minutes until they start to get a tad golden brown. Let them cool, eat, or freeze for later enjoyment.

2 Tbsp ground flax or chia seed
¼ cup sliced almonds
¼ cup mini chocolate chips
