Oh So Easy Sweet Potato Pack

4-5 Sweet potatoes (cut/chop up in fry shape or medium pieces)* includes some for plan-overs
1-1.5 Tbsp. olive oil
Balsamic vinegar (sprinkle in according to taste preference)
Seasonings to taste: salt, pepper, cumin, coriander, garlic, savory essence (we use MN Nice spice)

  1. After cutting up sweet potatoes, toss in a bowl with all the above ingredients.
  2. Lay out ingredients on foil (at least 1-1.5 feet long).  
  3. Cover ingredients with another layer of foil, pinching together both foil layers to make a closed pack.  Put small slits on top to vent.
  4. Grill on medium heat on top rack for approximately 15 minutes until sweet potatoes are soft and cooked.

You can take extra sweet potatoes and add in the following for another quick and easy grill pack:

  • Grilled chicken
  • S &W Black Beans
  • Brussel Sprouts
  • Spinach
  • Avocado
  • Drizzle on Cholula sauce
