Black Bean Fritters

Ingredients
1 (15oz) can S&W® Black Beans (drained, rinsed)
oil for deep frying
1/3 cup onion, finely chopped
1/4 cup cilantro, chopped
1 egg
2 tsp fresh ginger, finely chopped
1 small garlic clove, finely chopped
1 tsp ground cumin
1 tsp ground coriander
1/2 tsp salt
1/4 tsp hot pepper sauce
1/2 cup dry breadcrumbs

 Instructions

  1. Add small layer of olive oil to cooking sheet pan. Pre-heat oven to 375°F.
  2. Meanwhile, in food processor, place all remaining ingredients. Cover; pulse 4 or 5 times or until chopped and well mixed. Let stand 5 minutes.
  3. Form mixture into 1.75” rounded patties and place them on cooking sheet pan.  Cook ~10 minutes. Flipping at least once and baking until crisp on outside.

Cook's Note: Serving Suggestion-Serve with your favorite sweet and sour dipping sauce. Or top with Tzatziki Sauce and avocado slice.
