2/1/2 cups oatmeal (not minute or instant)
2 cups brown sugar
1 cup shortening
1 tsp vanilla
1 1/2 cup flour
1 tsp baking soda
1 tsp baking powder
1/2 tsp salt
Optional - raisins, 1 tsp cinnamon and/or nutmeg
- Mix brown sugar and shortening, then add vanilla and eggs and stir.
- Mix flour baking soda, baking powder and salt; then add slowly to wet mixture above.
- Add oatmeal and (cinnamon/nutmeg or raisins are optional).
- Drop rounded tablespoons of dough onto ungreased cookie sheet. Bake at 375° for 8 to 9 minutes for a chewy cookie or 10 to 11 for a crisp cookie. Cool for 2 minutes on the cookie sheet, then place on a wire rack.
