Grilled Corn with Cilantro-Lime Avocado Butter
1 Tbsp freshly squeezed lime juice
1 tsp lime zest
½ tsp salt (more to taste)
1/3 cup chopped fresh cilantro
12 ears of corn, shucked
- Avocado Butter: Take two small avocados, pitted and peeled, and place in food processor. Combine until creamy. Mix in 4 tbsp butter (softened) and one clove garlic. Mix thoroughly. Refrigerate 2 hours.
- Corn: Grill corn for 10 minutes, turning occasionally, or until you see some grill marks on the corn.
- Combine all other ingredients in a bowl and mix well.
- Transfer cilantro-lime butter into serving dish and serve with corn.
