What’s cookin’? Cauliflower
When is it in season? Summer
1 head cauliflower
1 bunch parsley
1 large tomato
4 green onions
salt + pepper
Spices (optional - cinnamon, nutmeg, cloves, etc.)
- Finely chop the cauliflower (you can use a food processor). Add about 1 Tbsp olive oil to a pan and sauté the cauliflower with salt and pepper to taste. Allow to cool.
- Chop parsley, tomato, green onion, and cucumber to desired size.
- Mix cauliflower and vegetables in a large bowl. Add juice from one lemon and 4 Tbsp olive oil. Add lemon zest and optional spices to taste.
