Cauliflower Tabouli

What’s cookin’? Cauliflower

When is it in season? Summer


1 head cauliflower                    
1/2 cucumber              
1 lemon
1 bunch parsley                       
1 large tomato                          
4 green onions  
olive oil                      
salt + pepper
Spices (optional - cinnamon, nutmeg, cloves, etc.)


  1. Finely chop the cauliflower (you can use a food processor). Add about 1 Tbsp olive oil to a pan and sauté the cauliflower with salt and pepper to taste. Allow to cool.
  2. Chop parsley, tomato, green onion, and cucumber to desired size.
  3. Mix cauliflower and vegetables in a large bowl. Add juice from one lemon and 4 Tbsp olive oil. Add lemon zest and optional spices to taste.
