Orange-Apricot Muffins

2 cups flour 
1 tsp baking soda
1 1/2 cups sugar
2 eggs
1 cup sour milk or buttermilk 
1/2 cup butter, melted 
1/2 cup grated orange rind
1/2 cup chopped dried apricots
1 cup chopped pecans

1 Tbsp sugar
juice of 2 medium oranges


  1. To prepare muffins: Preheat oven to 375°.
  2. In a large mixing bowl, sift together flour, soda and sugar. Stir in eggs, milk and butter (do not beat). Add rind, fruit and nuts.
  3. Spoon 1 Tbsp batter into greased small muffin tins. Bake 15 minutes.
  4. Meanwhile, prepare glaze by combining juice and sugar. Immediately pour 1 tsp glaze over each hot muffin.
  5. Serve warm. Makes 5 dozen.
