Chipotle BBQ Turkey Sliders

6 turkey drumsticks
1 medium onion, chopped
2 Tbsp olive oil
2 garlic cloves, finely chopped
1 Tbsp chili powder
1 tsp ground cumin
1/2 cup ketchup
1/3 cup cider vinegar
1/4 cup chopped chipotle chiles in adobo, including some sauce
1 Tbsp Worcestershire sauce
1 Tbsp molasses
1/2 cup water
Freshly ground pepper
16-20 slider rolls (depends on size)
Optional: cole slaw to top turkey
- Preheat oven to 325°.
- Remove turkey skin.
- Cook onion in oil with 1/2 tsp salt in Dutch oven over medium heat, covered, about 10 minutes. Stir occasionally. Add garlic and spices and cook 1 minute, stirring constantly. Stir in ketchup, vinegar, chiles, Worcestershire sauce, molasses, and water and stir for 1 minute over simmer. Add drumsticks and cover pot, braise in oven until meat is very tender for about 2 hours. Turn drumsticks over once.
- Transfer drumsticks to plate and cool. Discard bones and tendons and bull meat with fork or fingers into coarse shreds.
- Stir meat into sauce remaining in pot. Season with salt and pepper.
- Reheat when ready to serve in slider rolls.
