Chipotle BBQ Turkey Sliders

Serves 16-20

6 turkey drumsticks
1 medium onion, chopped
2 Tbsp olive oil
2 garlic cloves, finely chopped
1 Tbsp chili powder
1 tsp ground cumin
1/2 cup ketchup
1/3 cup cider vinegar
1/4 cup chopped chipotle chiles in adobo, including some sauce
1 Tbsp Worcestershire sauce
1 Tbsp molasses
1/2 cup water
Freshly ground pepper
16-20 slider rolls (depends on size)

Optional:  cole slaw to top turkey


  1. Preheat oven to 325°.  
  2. Remove turkey skin.  
  3. Cook onion in oil with 1/2 tsp salt in Dutch oven over medium heat, covered, about 10 minutes. Stir occasionally. Add garlic and spices and cook 1 minute, stirring constantly. Stir in ketchup, vinegar, chiles, Worcestershire sauce, molasses, and water and stir for 1 minute over simmer. Add drumsticks and cover pot, braise in oven until meat is very tender for about 2 hours. Turn drumsticks over once.
  4. Transfer drumsticks to plate and cool. Discard bones and tendons and bull meat with fork or fingers into coarse shreds.
  5. Stir meat into sauce remaining in pot. Season with salt and pepper.
  6. Reheat when ready to serve in slider rolls.
