Super Easy Blueberry and Avocado Leafy Green Salad

12 oz spring mix leafy greens
1/4 cup thinly sliced red onion
1 cup blueberries
1 avocado, diced
1/2 cup gorgonzola, crumbled
1/3 cup toasted pine nuts
Red wine vinaigrette


  1. On large rimmed platter, place greens, mixing in red onion
  2. Attractively arrange the next 4 ingredients on top of greens
  3. Lightly salt and add fresh cracked pepper 
  4. Just before serving, toss with red wine vinaigrette
